Xanthan gum is widely used in industries such as food, pharmacy and cosmetics.

Xanthan gum helps to prevent oil separation by stabilizing the emulsion, although it is not an emulsifier. It is also used in oil-in-water emulsions to help stabilize the oil droplets against coalescence. It helps create the desired texture in many products and keep the product uniform. Xanthan gum is used to prepare water gels. It has some skin hydrating properties.
